Welcome to my Norwegian childhood and all the yummy baked items that came out of my mom's and grandma's kitchens. One of my all-time faves was Julekake (yuh-leh-kah-kah), which means "jule cake" in Norwegian. Mom made this with candied fruit but some of my sisters enjoyed it more with raisins - I love the candied fruit myself but am offering both versions here.
This bread was best toasted. So delicately crunchy with the warm aroma of cardamom shining as the star of the show, subtle hints of orange, and those bits of candied fruit adding a pop of sweet to every bite. Yum! Mine is no different - toast for absolute best results.
Conquering this in a gluten, wheat, dairy, and soy free recipe has been my goal for years and I've finally managed to do it. This bread is soft and chewy on the first day and then hardens over time as most GF breads tend to do. I recommend cutting it into slices and then freezing them and pulling them out for toast as desired. Slap some butter or vegan butter on there and you have a breakfast delight that will put a smile on your face.
Each loaf weighs in at 30+ ounces and should yield at least 15 slices of bread. I bake these in long pans so you get more slices per loaf.
