Howdy and welcome to my little corner of the universe! I am Cherie and though I love cake, I can no longer eat it. Besides being a celiac AND allergic to wheat, I’m also allergic to a handful of other foods and as I found out after a bout of pneumonia spring 2011, a diabetic as well. Ho hum. That last one really turned my life upside down and since then, I’ve been trying to get a firm grip on how to lead the rest of my life.

After trial and error, I hit on the paleo lifestyle and more specifically, Whole30. In January of this year (2012), my husband and I made a lifestyle change for the long haul – we eliminated all kinds of things from our diet and started out our new lives without any grains, sugar, artificial sweeteners, corn, soy, dairy, potatoes, legumes… basically, we eat meat, veggies, fruits, fat (coconut oil, win!). That’s it. In addition, we have decided to purchase organic when at all possible and only hormone/antibiotic/feedlot/cage-free meats and eggs. A radical change of diet for better health and diabetes control.

As part of this new lifestyle, I quit taking all medications relating to my diabetes on January 1 and I’m happy to report that so far, my numbers are fab! I started out with an A1C of 14.1 in May 2011 and my last test (end of January 2012) was 5.8. Yay! I’m hoping to get that down to the low 5′s over time.

This blog details what works for me with my multiple allergies and other health issues. It may not work for you. And you’ll not find anything like how to make a cake paleo or diabetic friendly. This year was all about changing my outlook on food and my diet in general. No more cakes. No more muffins. No more pasta.

In keeping with this organic, whole-food, radical lifestyle, my new motto is…

I will change my lifestyle to fit my new way of eating. I will not make my new way of eating fit my lifestyle. In other words – no making foods of the past (cakes, breads, muffins, cookies, pasta, etc) but instead rethinking what I eat. Wholesome, organic, whole foods that are nourishing and delicious.
