Gluten-Free Chicken Lettuce Wraps

I’ve been on an asian food kick lately. The other night I made a Vietnamese Pepper Chicken (beyond delicious – I’ll post the recipe in a bit after I’ve made it again so I can take a photo) and tonight I was in the mood for Chicken Lettuce Wraps. Specifically the ones that we GF folks can enjoy at PF Changs.

I thought back to the flavors that I could recall from the crunchy, somewhat sweet dish. Obviously there is chicken and soy sauce and after a bit of a think, I came up with a recipe that is pretty darn close. And just as delicious.

The trick to making this recipe work is grinding up the chicken breast. I have an old hand grinder that you fasten to your counter top. I quickly ran my breasts through there and ended up with a coarsely ground pile of chicken. Perfect.

Gluten-Free Chicken Lettuce Wraps

2 pounds chicken breast, ground or chopped fine
2 Tbl fresh chopped ginger
2 Tbl fresh chopped garlic
1/2 cup soy sauce (La Choy is gluten-free)
3 Tbl honey
2 Tbl peanut butter
2 Tbl ketchup
1 Tbl rice vinegar
1 Tbl red curry paste (or fresh chopped chilis)
1/4 cup chopped celery
1 can water chestnuts, chopped coarsely
3-4 Tbl oil *

Grind or finely chop the chicken. In a large frying pan or wok heat the oil until hot. (* sesame oil is the best, I’m allergic to this so I used regular vegetable oil)

Toss in ginger and garlic and stir for 2 minutes or until nicely wilted and translucent. Add chicken and cook, stirring occasionally, until chicken is cooked through.

Combine soy sauce, honey, peanut butter, vinegar, curry paste and mix until well blended. Add to cooked chicken and stir. Cook for 3 minutes, stirring constantly.

Turn off heat and add celery and water chestnuts. Stir until heated through.

Serve on a large platter with lettuce cups (iceberg lettuce is crunchy and my personal favorite). Spoon chicken mixture into each cup and sprinkle with soy sauce as desired. Roll like a burrito and enjoy.
